Who Says Cowboys Can’t Cook?

Two weekends ago Dallas had to travel to Fort Worth for work so he got a ticket to go see the Dallas Cowboys play the Eagles in their home field playoff game. They won. Dallas was ecstatic!

The following weekend, this past Sunday, the Cowboys played the Vikings. Dallas cooked a bunch of Japanese curry stew and invited a friends over to watch the game. Dallas was all decked out in his Cowboys gear as he was cooking in the morning. I wasn’t sure who I wanted to cheer for, but I kind of wanted Brett Favre to do well so I wore my Packers tshirt. Dallas didn’t really like it, but oh well. In the end, or actually, right from the beginning, the Cowboys did not do well and lost the game. But at least everyone liked the curry!

Later on we watched the second game and played some games. Killian brought over a Press Your Luck game for the Wii so we took turns playing that. We also busted out our new Super Mario Brothers game.

And ate more delicious curry.

Christmas in WI

On the day after Christmas we went to Oak Creek, WI to celebrate with my family. Jessica got a Wii Active Life: Extreme Challenge game for a Christmas gift and we all had a fun time playing it. The game comes with a mat, kind of like Dance Dance Revolution, and you have to jump and run on it to make your on-screen character do things.

Amanda showed me Jessica’s wishlist for santa. It was more like a wishbook – multiple pages stapled together and inserted into an envelope.

I can’t remember what “schering” was supposed to be, but Jess really wanted Laffy Taffy. The end – “batadohede” – is potato head. This list kind of reminded me of Stephanie’s wishlist from a few years ago. Except Jessica is younger. As you can see, she is just learning to write on her own. But she is having fun doing it. She even made all of our place cards for the dinner table.

Not sure why Jessica chose to call my mom and dad “grandpa” and “grandma” but wrote her own parent’s names out. She also got to choose where everyone sat. Jess put me on one side of her and my mom on the other.. and of course Dallas was as far away as she could get him. Ha. She also looked online with my mom to see the proper places for all the silverware and side plates and glasses and things.

After dinner we opened the gifts that Dallas and I got for Steph and Jess.

We got each of the girls a Nintendo DS Lite game. Jess’s was some pet game and Steph’s was a style-related game. Most of Steph’s gifts were also style-related: a belt, earrings, fingerless gloves, a shirt, shoes. Seems appropriate for a 13-year-old. Jess’s gifts were more drawing/art-related: a stamp pad, book on how to make fingerprint drawings, stamps, markers, coloring book. And this also seems appropriate for a first grader. They seemed to both like their gifts, so that’s good. My mom and dad surprised us with a few gifts, even though we agreed not to exchange. And my brother gave me some fresh, squeaky cheese curds.

Paul & Kate’s Halloween Housewarming Party

Over the summer, Paul Baker and Kate bought a condo in a high rise on Lake Shore Drive. On Saturday, they had a Housewarming/Halloween party. We were not required to dress up to attend the party. About half did and half didn’t. Paul and Kate did.

Conan, their cat, chose not to dress up. He was looking very debonair and was very social during the party.

Dallas used to live in the building next to the one Paul and Kate live in, but I’d never been to a high rise on Lake Shore Drive. The views were amazing.

We played Wii Sports Resort and somehow got stuck on the frisbee game where you throw the frisbee for the dog to catch. Alden and I were the big winners of that game.

Later on we played Rock Band, of course. It wouldn’t be a party at Paul Baker’s house without Rock Band! He has the Beatles version of the game, which allows you to have two singers. rachelleb and lisap were a singing force to be reckoned with!

Paul and Kate have a great home with beautiful views, and know how to throw a really fun party! Did I mention they got Portillo’s to cater? So yummy. Congratualations Paul and Kate (not plus 8)!

Crunchy Baked Pork Chops

Crunchy Baked Pork Chops

I had this Smitten Kitchen recipe for Crunchy Baked Pork Chops printed out and in our kitchen for a long time. We had the pork chops in the freezer, we had all the ingredients, we just never made them. I actually bought parsley twice for this recipe. Then one Sunday I decided to do it. Well, by “I,” I mean “Dallas.”

Jess came over and she and I were playing Wii. Dallas was nice enough to cut up limes and keep serving us Corona Light while we played. Not only that, but he made the crunchy baked pork chops while we sipped our beer and played video games. There was some grumbling from the kitchen because the recipe is kind of long and drawn out.. you brine the pork chops and make your own breadcrumbs. Even though we had a canister of breadcrumbs in the cupboard I insisted that Dallas stick with the recipe no matter what.

In the end Dallas said that no matter how the pork chops turned out, he didn’t think they were worth the time and effort. Jess and I, torn away from the Wii, begged to differ. They might have been the most moist and flavorful pork chops I’ve ever had! And the crunch on the outside was just perfect.

So, please make this recipe. Just know that going into it you need to be patient and expect a lot of steps!

Crunchy Baked Pork Chops
This recipe was developed using natural pork, but enhanced pork (injected with a salt solution) will work as well. If using enhanced pork, eliminate the brining in step 1. The bread crumb mixture can be prepared through step 2 up to 3 days in advance. The breaded chops can be frozen for up to 1 week. They don’t need to be thawed before baking; simply increase the cooking time in step 5 to 35 to 40 minutes.

Table salt
4 boneless center-cut pork chops, 6 to 8 ounces each, 3/4 to 1 inch thick, trimmed of excess fat
4 slices hearty white sandwich bread, torn into 1-inch pieces
1 small shallot, minced (about 2 tablespoons)
3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon)
2 tablespoons vegetable oil
Ground black pepper
2 tablespoons grated Parmesan cheese
1/2 teaspoon minced fresh thyme leaves
2 tablespoons minced fresh parsley leaves
1/4 cup plus 6 tablespoons unbleached all-purpose flour
3 large egg whites
3 tablespoons Dijon mustard
Lemon wedges

Adjust oven rack to middle position and heat oven to 350 degrees. Dissolve 1/4 cup salt in 1 quart water in medium container or gallon-sized zipper-lock bag. Submerge chops, cover with plastic wrap, and refrigerate 30 minutes. Rinse chops under cold water and dry thoroughly with paper towels.

Meanwhile, pulse bread in food processor until coarsely ground, about eight 1-second pulses (you should have about 3 1/2 cups crumbs). Transfer crumbs to rimmed baking sheet and add shallot, garlic, oil, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Toss until crumbs are evenly coated with oil. Bake until deep golden brown and dry, about 15 minutes, stirring twice during baking time. (Do not turn off oven.) Cool to room temperature. Toss crumbs with Parmesan, thyme, and parsley.

Place 1/4 cup flour in pie plate. In second pie plate, whisk egg whites and mustard until combined; add remaining 6 tablespoons flour and whisk until almost smooth, with pea-sized lumps remaining.

Increase oven temperature to 425 degrees. Spray wire rack with nonstick cooking spray and place in rimmed baking sheet. Season chops with pepper. Dredge 1 pork chop in flour; shake off excess. Using tongs, coat with egg mixture; let excess drip off. Coat all sides of chop with bread crumb mixture, pressing gently so that thick layer of crumbs adheres to chop. Transfer breaded chop to wire rack. Repeat with remaining 3 chops.

Bake until instant-read thermometer inserted into center of chops registers 150 degrees, 17 to 25 minutes. Let rest on rack 5 minutes before serving with lemon wedges.

Hosting a Super Bowl Party

Super Bowl 43Originally we were going to spend Super Bowl 43 at Jen & Chad’s house, but Jen and Quinn are visiting relatives in California and Chad was traveling on business and got stuck there longer than he’d anticipated. So Dallas and I volunteered to host the party at our house.

It ended up being a fabulous food party. Dallas made 4 pounds of slow cooker pulled pork and blue cheese cole slaw to eat on the sandwiches or on the side. I made cocktail wieners and guacamole. Loden made cheesy potato casserole and mini football-shaped brownies. On each one there were the frosted football details. Kristin made cornbread and chicken fingers. Jill made pumpkin cake and chocolate chocolate chip cake. Liz made cookies. And everyone brought beer and wine. So much food and drinks. So delicious.

The game? I thought it was ok. Everyone keeps saying how it was such a good game, but I don’t think any of us really got into it until the 4th quarter.. and specifically Brian and Loden were just cheering for their numbers at the end (they both won money). I don’t really even remember any of the commercials. They weren’t that great this year. Some were even old commercials that were already playing on TV. We did like the Cash4Gold commercial, though. It sparked a long discussion about Snuggies and ShamWows.

Killian and Liz brought their new dog, Sandy, over to the house. She’s only about 6 months old and they’re still training her so they couldn’t leave her at home the whole time. I thought she was going to be a crazed puppy, but she was really relaxed and listened very good. .. and no accidents! Sandy is the 4th dog (Maggie, Milo, Jackson) to visit our house and we’ve only lived there 3 months. Guess that means we have a dog-friendly condo. Jill and Brian brought their extra Wii controllers and the Mario Kart game. After the football game we all played Wii.

Abby and Phil’s wedding was Saturday night (more on that later) and I was so exhausted that I couldn’t bring myself to take any photos yesterday. I know. Crazy!
