Lots of car bombs

On Friday night Trent and Loden had their wedding rehearsal. After the rehearsal everyone headed over to have dinner in Roscoe Village. And then after dinner, they all headed to the Village Tap where they rented out the back room. They invited a lot of out of town guests and close friends to join them for the rehearsal party at The Tap. It would not be Trent’s party without a ton of Irish car bombs. That receipt for $119 worth of car bombs was only one of many checks. All those car bombs made everyone really adventurous in the photobooth! Everyone had such a great time, maybe too good of a time, in hindsight! And we love being at The Tap, where it always feels a bit like home.

Chad’s Birthday

Last week was Chad’s birthday and he invited everyone out to The Village Tap. When we arrived I thought maybe I was at the wrong party. That’s a lot of toddlers for an adult party. Then I remembered. We’re old. Haha.

It was fun to have Quinn, Conor, Liam and Halle at the party.

And Quinn was wiggling and giggling. And giggling. And not eating.

Of course, Dallas.

Dallas is very popular with the under 6-years-old crowd. He isn’t exactly the best influence, though. Don’t sit down and eat nice. Only eat french fries. He also taught Quinn how to yell “Birthday Boats!!!” at everyone, meaning that they should go to the gambling casino boats for Chad’s birthday. Then if that wasn’t enough Dallas and Ed showed him how to make a hand motion like he’s shaking dice and say “Shake’em, shake’em, shake’em!!” But they do love him. And Chad and all the guys thought that gambling bit was pretty funny, too.

Even the babies like Dallas. Halle was getting fussy because it was nearing her bedtime but she quieted up when he held her and bounced her around a bit.

Meg made a birthday cake for Chad. Here’s Elisa and Meg lighting the candles.

They only had about half the candles needed and the cake was already a fireball. Good thing they didn’t have a candle for every year. :) You’ll notice part of the cake is missing. That’s the cake the kids had after dinner, before they were sent home to bed.

I realized when I got home that I had no photos of the birthday boy. Then I saw a few black photos at the end. I tried to take a photo of Chad blowing out his candles but they didn’t turn out… here’s some photoshop magic I did to reveal the picture. Not great, but there’s Chad.

Happy Birthday, Quinn

Last weekend was also Quinn’s 2nd birthday. In the afternoon Jen and Chad reserved the back room of The Village Tap and we celebrated out there. Dallas was in North Carolina, so he couldn’t attend, but when I walked in Quinn looked at me and said “Dallas!” Maybe he gets mixed up about who is who. Jen baked a cake and Chad decorated it with a Yo Gabba Gabba character. I don’t really even know what that is, but I guess all the kids are crazy for it now. Quinn opened gifts and ran around and played a lot. After a few hours he went home with Jen and her parents, but the rest of us stayed out. I ended up eating 2 of my 3 meals of the day at The Village Tap, but I’m not complaining about that. I love that place.

Martha Stewart’s Coconut Macaroons

Kristin’s birthday was on Monday but we celebrated at The Village Tap over the weekend. I’d already gotten her prints of Jackson as a small gift, but felt like baking so I made her cookies for a birthday treat. I decided to make the macaroons recipe from Martha Stewart’s Cookies mostly because I had all of the ingredients on hand.

I never made macaroons before and was afraid of how they’d turn out. Everyone at The Village Tap said they really liked them. They were really simple to make. I made one batch of plain coconut and one with chocolate chunks. I also used sweetened coconut because that is what I had in the cupboard.

Coconut Macaroons
Unsweetened shredded coconut is available in health food stores. You can also use sweetened shredded coconut (reduce the sugar in the recipe from 3/4 cup to 1 tablespoon). For the variations, pair the coconut with chocolate – chips or cocoa powder – to create rich combinations reminiscent of a candy bar. Makes about 1 1/2 dozen.

3/4 cup sugar
2 1/2 cups (about 3 ounces) unsweetened shredded coconut
2 large egg whites
1 teaspoon pure vanilla extract
Pinch of salt

Preheat oven to 325 degrees. Line a baking sheet with parchment paper.

In a large bowl, combine sugar, coconut, egg whites, vanilla, and salt. Use your hands to mix well, completely combining ingredients.

Dampen hands with cold water. Use 1 1/2 tablespoons to form mounds; place on prepared baking sheet, spacing about 1 inch apart.

Bake until golden brown, 16 to 17 minutes, rotating halfway through. Let cool on a wire rack. Cookies can be stored in an airtight container at room temperature up to 3 days.

Chocolate Chunk Macaroons
Follow the recipe for coconut macaroons, adding 1/2 cup coarsely chopped semisweet chocolate to the other ingredients. Use 1 1/2 tablespoons of mixture to form loose haystacks; place on prepared bakign sheet, spacing about 1 inch apart. Bake until golden brown 15 to 20 minutes, rotating sheets halfway through

Chocolate Macaroons
Place 4 ounces semisweet chocolate, chopped into small pieces, in a heatproof bowl or the top of a double boiler set over a pan of simmering water. Stir until chocolate has melted; set aside to cool. Follow instruction for Coconut Macaroons, increasing coconut to 2 2/3 cups and combining all ingredients with cooled chocolate and 1/2 cup unsweetened cocoa powder, sifted. The baking time should be about the same; you will know the cookies are done when they are just firm to the touch but still soft in the middle.
