Thai Basil Chicken with Cashews

A few months back I made Thai Basil Chicken with Cashews and thought it turned out great. The jalapenos kind of scared me, but they were not too spicy at all. This dish was fast and easy to make. I’d definitely make this again!

Thai Basil Chicken with Cashews
From: Steamy Kitchen (she got it from Martin Yan of Yan Can Cook) Servings: 4

Notes from Steamy Kitchen: What I love about this recipe is that it’s super quick and simple to make. What takes the most time in this recipe is cutting up the chicken! Really, it’s that simple. Yes, if Yan Can Cook, So Can You! For Gluten-free version, use Panda Brand Lee Kum Kee Oyster Sauce in green bottle (though please double-ck label), San-J wheat free tamari in place of soy sauce and GF beer.

Marinade
2 tablespoons lager-style beer, like Tsingtao
1 tablespoon oyster sauce
1/4 teaspoon ground white pepper (or black pepper)
12 ounces boneless, skinless chicken breasts, cut into 1/2-inch cubes

Sauce
1/4 cup chicken broth
1 tablespoon lager-style beer, like Tsingtao
1 teaspoon soy sauce
1 tablespoon fish sauce (or add an additional 1 1/2 teaspoons soy sauce)

1/4 teaspoon sugar2 tablespoons vegetable, canola or peanut oil
2 teaspoons chopped garlic
4 ounces asparagus, trimmed and cut into 1-inch pieces
1 teaspoon cornstarch, dissolved in 2 teaspoons water
1 fresh jalapeno chili, thinly sliced into rings (optional)
1/4 cup lightly packed Thai basil or sweet basil leaves.
1/2 cup roasted cashews

Combine the marinade ingredients in a bowl. Add the chicken and stir to coat. Let stand for 15 minutes.

Combine the sauce ingredients in a small bowl and set aside.

Place a wok or wide saute pan over high heat until hot. Add the oil, swirling to coat the sides. Add the garlic and cook until fragrant, about 10 seconds. Add the chicken and asparagus and cook, stirring constantly until the chicken is no longer pink, about 2 minutes. Add the sauce and bring to boil. Add the cornstarch solution and cook, stirring, until sauce thickens, about 1 minute. Remove pan from heat and stir in jalapeno chili, basil leaves and cashews.

New York Leftovers

A few extras from my trip to New York. Above is a photo from my room at the Wyndham Garden Times Square South. The room was really small, but pretty nice anyway. After I checked in and got to the room I looked out the window and saw this:

That night I didn’t see friends for dinner. I was tired! I took a nap then went out for a walk. Around the corner from the hotel was Thai Select. Swanky inside.

I just got a take out order and went back to the hotel. I thought their wontons were really pretty (tasty too!).

I was finished eating dinner and was doing some work on my computer when there was a knock on the door. I looked through the peephole and saw a hotel employee with the tray. Through the door I yelled, “I didn’t order anything!” and he said “Courtesy of the hotel.” I opened the door and this is what he brought in:

I forgot that when I booked the hotel I signed up for the Wyndham points program. When I signed up there were some questions about personal preferences. I vaguely remember checking off some boxes about fruit and Diet Coke. It was a nice surprise.

At the Javits Center the outside of the building is pretty cool – the glass and the space frame structure. But the inside is all cement and bleh, drab. Seems dated. At least you can still see the cool glass and structure from parts of the inside.

Thai Classic Restaurant

Orchid Chicken – sliced chicken breast stir-fired in our chili sauce with onion , mushroom, bell pepper, pineapple , green onion and cashew nut :: Thai Classic Restaurant, Wrigleyville, Chicago

Thai Classic Restaurant is another new restaurant we tried after going to Chicago Comics. I thought it was ok. The pineapple used to serve my meal was fun, but I don’t remember the food being terribly outstanding.

Tessa Visiting

On Saturday mom, dad, Kelly, Jeff, and Tessa all came down from Wisconsin. It was a good visit. We went for a walk, played in Hamlin Park, ate at Thai Linda, and just hung out. Everyone stayed overnight because my brother and his family came down the next day and we all went to the beach. (More on that later.)
