Queen of the Grill

When Dallas is home he never lets me use the grill, which is good because “yay! he’s cooking dinner for me” and bad because “hey, I want to play too!” On Sunday he went to the Bears game and was gone for like 10 hours. I ran (ok, ran/walked) around the neighborhood, came home, showered, went to Whole Foods, then came home, marinated, and grilled up a storm. On the shish kebabs are squash, eggplant, red bell peppers, green bell peppers, mushrooms, onion, and chicken. Then I grilled some fruit and had a sundae for dessert. Yum!

Chicken Parmesan Bits

After seeing this recipe for Chicken Parmesan Bits on not martha, Dallas and I decided to make it. It was so good. I had one serving and then went back to the pan just to eat the little bits off the foil. It always reminds me of my mom when I do that but, she’s right, it is always the best part. Next time I think we might use an egg instead of all the butter, as was suggested in the comments on the recipe post.

Calm Before the Storm?

The last week it’s been really gray and gross here but yesterday and today were like the most perfect end of summer/early autumn days. Low to mid 70s, sunny, a slight breeze, a fresh crispness in the air. This is my favorite time of year… and luckily for me I had today off so I could enjoy it.

For lunch I just wanted to be outside so I grabbed a book and headed down Division to see who still had their outdoor seating out and more importantly, where the sun was hitting that seating. I ended up at Mac’s with my most favorite salad ever. In fact, I just had this same salad for lunch yesterday at Nordstrom Cafe. And I have made it at home over the summer too. Probably nominated as my #1 favorite lunch of the year. It’s got mixed greens, grilled chicken (at Mac’s the chicken was still warm from being so fresh off the grill), strawberries, goat cheese, candied nuts, and a balsamic dressing. There’s something about the sweet nuts and fruit mixed with the tangy goat cheese and dressing.. YUM. I could eat this all day. Especially on a nice day like today.

I’m afraid that winter is going to happen any day now!

Dinner @ Cafe 28

I’d only been to Cafe 28 for brunch so last night we tried it out for dinner. The brunch there is really great, but we kept hearing that the dinner was just as good. We weren’t disappointed. It was awesome. I had pistachio-crusted chicken with sauteed swiss char, asparagus and garlic mash. And a side of maduro (sweet plantains), always!

The Chicken Rip Off

A couple weeks ago I went to Jewel and they were having a sale – buy 1 get 1 free chicken breasts at $5.49/pound. I don’t know how much per pound is a good deal on chicken, but I know what buy 1, get 1 free means, so I picked up a couple packages. When I got home, I had a pack of the same chicken in the freezer from a previous purchase, but I noticed that then the chicken was only $3.99/pound
