Praline Cookies

Jen and Chad hosted a New Orleans-themed Superbowl party a while back. I was bringing cookies and wanted to stay on theme, so I made praline cookies.

Here‘s an interesting history of pralines. I definitely think New Orleans when I see them. I even learned to make pralines once while I was visiting.

Aunt Mary Dillon’s Praline Cookies
From: Martha Stewart Living, February 2000

Yield Makes 3 dozen

1 2/3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter
2 1/2 cups light-brown sugar, firmly packed
1 large egg
1 teaspoon pure vanilla extract
1/2 cup heavy cream, plus more if necessary
1 cup sifted confectioners’ sugar
1 cup pecan halves, toasted and broken into large pieces

Preheat the oven to 350 degrees. Sift together flour, baking powder, and salt in a medium bowl. Set aside.

In the bowl of an electric mixer fitted with the paddle attachment, cream butter and 1 1/2 cups light-brown sugar on medium speed until light and fluffy, about 2 minutes. Add egg and vanilla. Beat until fully combined. Add dry ingredients, and beat on low speed until combined.

Drop batter in rounded teaspoons onto ungreased baking sheets about 2 inches apart. Bake until firm and barely golden, 10 to 12 minutes. Transfer pan to a wire rack to cool for 5 minutes, then transfer cookies from pan to wire rack.

In a small saucepan, combine remaining 1 cup light-brown sugar and cream. Bring to a boil over medium heat. Cook, stirring constantly, for 2 minutes. Remove from heat. Add confectioners’ sugar, and whisk until smooth. (If frosting thickens, thin with cream.) Add pecan pieces. Place cookies on a cooling rack over a lined baking pan. Spoon about 1/2 teaspoon praline mixture onto each cookie.

I can’t believe Rory can be a year old already, but this past weekend we celebrated his first birthday! Danny’s friend owns a cute little restaurant in Forest Park called Amelia’s and closed it down for the afternoon for the party. I was sort of dreading going to Forest Park, but it only took us about 20 minutes to get there from our house! The party was a fun mix of family and a bunch of our friends. Rory was not into the cake at all, but he seemed to like the opening of presents. Well, I think he liked the paper the best.

After the party we went to Danny and Caroline’s house in Oak Park to hang out some more. Somebody had to drink all the leftover beer and it might as well be us. And Ed! Rory missed his nap because of the party and somehow stayed awake and happy long into the night. And he did eat a bit of cake once the pressure was off and he was seated comfortably in his high chair at home.

Superbowl XLVII

For Superbowl XLVII (47) we went to Jen and Chad’s house. They somewhat recently painted one of their kitchen walls with the chalkboard paint. I’m sure this was for Quinn, but it worked great for the squares game!

No one really cared very much who won the game, except Chad’s dad, who was cheering for Baltimore because he used to live there. Since the game was in New Orleans, Chad and Jen had a New Orleans-themed party. Danny cooked chicken and sausage gumbo and crawfish etouffee. Jen made andouille cheese dip and jalapeno poppers stuffed with crab. Brian and Jill brought king cake. Another friend brought hurricane punch. To contribute to the party and to be on theme, I made praline cookies. More on that later!

The best part of the Superbowl this year was Beyonce’s halftime show. I thought it was really great. Everyone seemed to enjoy it. After the half time there was a power outage. San Francisco was way down and tried to make a big comeback, but Baltimore won in the end.

Dallas’s Birthday

For Dallas’s birthday we got together with twenty, yes TWENTY – it was the biggest reservation they could make, friends for dinner at Zed 451. The Roundarch holiday party was at Zed 451 last year and we enjoyed it so much we decided to go back. For about $48 each person you get unlimited food. You can go up to the salad bar as much as you want, whenever you want and there are guys who come around with meat and you just tell them how much you want. The salad bar was so good, I could have just eaten that. Tons of great meats and cheeses there too! As for the meat at our table… I can’t even tell you what all we had. Several steaks, salmon, venison, duck, pork belly, sausage. Whoa. So. Much. Meat.!!

Both before and after dinner we met up with even more friends and hit up a whole series of bars that I’d never been to: Streeter’s Tavern, Jake Melnick’s, Clark Street Ale House, Celtic Crossings, The Lodge. I think we got home at somewhere around 4:00 a.m.!!! Long night, fun night. Great friends!

Horseshoe Casino

A few of our friends wanted to go to the Horseshoe Casino on the Friday after Thanksgiving, so we decided to go. I hadn’t been to a casino for almost two years, so I thought I’d check it out, even though they’re not my favorite place ever. Dallas and I drove with Marty and Chad, Brian, Trent and Loden went in a separate car. Paul, who lives in Indiana, met us there.

I had fun learning how to play a 3-card poker game. Loden and Chad and I were the only ones at the table, the bets were pretty low at $5 minimum, and our dealer was awesome about teaching us how to play. I even won $125 on just one hand! But I didn’t stop there and ended up losing about $60 total. Not too bad, but winning would have been nice.

Dallas, Marty, Loden and I headed back to Chicago after a few hours. It’s only about a 20 minute drive and we were starving so we went to Smoke Daddy. I heard today that Trent and Brian and Chad didn’t get back to Chicago until something like 3 a.m., but I also heard they raked in the money!
