Eggplant Parmesan

I go to the gym 3-4 times every week and Dallas has been very supportive of this by many nights having dinner ready for me when I get home. One night I came home and he was in the midst of making eggplant parmesan from one of our favorite cookbooks, Cooking for Two 2009. (The book is on sale for $7.95!)

We paired it with spaghetti and a multigrain French loaf. So delicious!
