What a Difference 3 Months Makes at Humboldt Park

I posted the photo above back in May and was sort of mocking Humboldt Park. No diving? No problem. There was no water!

Last night I biked by the same part of the park and this is what I saw.

I guess the joke is on me! There were a bunch of kids swimming and lifeguards and everything. The park was hoppin’. Baseball games, lots of people out for a stroll or walking their dogs, people bike riding, families picnicking, people just enjoying the weather in general.

Fight Club by Chuck Palahniuk

I have always shied away from Chuck Palahniuk’s books. I don’t know why. I’ve heard some of them are really good.. even this book. I wanted to read it for a long time.. when my brother gave it to me it sat around my house for literally years before I read it.

I thought Fight Club was a good book. I’d already seen the movie, so I knew certain elements that probably made the book less enjoyable to read than for someone who never read the book or saw the movie. I still liked it though.

And I made it through a Palahniuk book. Gruesome at times, but done. Now I can read his book Choke, which I’ve been hearing is really good as well. It’s being made into a movie right now so I better hurry up, lest that story be spoiled for me as well!

The Rocking Horse is a new bar that opened nearby our house in Logan Square. Last night we went to check it out. I liked it. I have high hopes!

The interior is nice and new with lots of booths and tables to sit. It’s pretty blank, though. No theme. One rocking horse on one wall. There are 2 TVs but not that big and not taking over the decor like a sports bar. The food menu was big – 2 pages. We got a trio of pretzels for an appetizer. They were very tasty. Dallas really liked the ahi tuna club he ordered. I got a buffalo chicken wrap. It was good, but too spicy for me. Also the sauce to chicken ratio was kind of high. Too saucy.

I think we’ll be back, though, with friends. Most of all, I’m just happy to have a decent new place to eat and get drinks that is nearby where I live!

Martha Stewart’s Peanut Butter Cookies

I made these when my nieces and cousin’s kids were visiting because all kids love peanut butter cookies, right? The recipe is from (surprise, surprise!) Martha Stewart’s Cookies. I love this cookie cookbook so much. Every cookie I’ve made from this book has been delicious and turned out. That being said, the dough for these peanut butter cookies was very sticky. I couldn’t press it down really. Maybe because it was very warm in my kitchen? Anyway, the cookies turned out very light and delicate, unlike a heavier, chewy peanut butter cookie. Very tasty!

Peanut Butter Cookies

Recipes for peanut butter cookies abound, but this one packs a particularly powerful punch. The dough is studded with whole salted peanuts for extra crunch. Sandwich a few with jelly for an afternoon snack. Or embelish them instead by piping melted semisweet chocolate into the lines of the cross-hatch pattern. Makes 2 1/2 dozen.

1 1/4 cup all-purpose flour, plus more for flattening cookies
3/4 teaspoon baking soda
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup dark brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup smooth peanut butter (crunchy may also be used)
1/2 cup salted peanuts

Preheat oven to 350. Sift flour and baking soda into a bowl.

Put butter and both sugars in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until pale and fluffy; about 3 minutes. Add egg; mix until well combined. Mix in vanilla and then peanut butter. Reduce speed to low. Add flour mixture; mix until just combined. Turn in peanuts.

Drop batter by heaping tablespoons onto baking sheets lines with parchment paper, spacing 1 1/2 inches apart. Dip the bottom of a galss in flour, tapping off excess and use it to flatten balls slightly. Firmly press fork tines into each dough ball to make a cross-hatch pattern.

Bake cookies, rotating sheets halfway through, until centers are firm and edges are lightly browned, about 25 minutes. transfer cookies on parchment to a wire rack to cool completely. Cookies can be stored in airtight containers at room temperature up to 3 days.

Family Visit to Chicago

This past weekend we had a bunch of my family down from Wisconsin for a visit to Chicago. My cousin Kelly, Jeff, Tessa and Charlotte came on Friday night and stayed over til Saturday. My parents and my Aunt Sue arrived on Saturday and stayed over til Sunday. My brother Richard, Amanda, Jessica, and Stephanie came down for the day on Saturday. We hung around on the roof deck, played bags, had a barbecue, and went to Palmer Square park. After a lot of people left, my dad and I played Mario Karts on the Wii and my mom and I and Dallas played Tetris on the Wii. Sunday morning my parents and my aunt and I went to brunch at Dunlay’s on the Square and then walked through the Logan Square Farmers Market. It was fun to have everyone down for a visit!

These photos are from Palmer Square. Except the last one of Charlotte, who didn’t go to the park. She wasn’t feeling well on Saturday but we did manage to get a few smiles out of her.
