Miso-Glazed Salmon

Miso Salmon

While browsing for a new way to make fish I came across this recipe for miso-glazed salmon. It was very quick and easy to make and came out super tasty. The glaze caramelizes and is really flavorful without overwhelming the salmon. Here’s a video of the preparation techniques, if you need a bit more confidence in the kitchen.

To make it a meal, I made some gyoza and edamame and Dallas made rice. The only downside of making the miso-glazed salmon was that I had to buy this whole 12 ounce package of miso when the recipe only needed 2 tablespoons. I guess it’s an opportunity to find some more miso recipes.

Miso-Glazed Salmon

Ingredients
1/4 cup packed brown sugar
2 tablespoons low-sodium soy sauce
2 tablespoons hot water
2 tablespoons miso (soybean paste)
4 (6-ounce) salmon fillets (about 1 inch thick)
Cooking spray
1 tablespoon chopped fresh chives

Preparation
Preheat broiler.

Combine first 4 ingredients, stirring with a whisk. Arrange fish in a shallow baking dish coated with cooking spray. Spoon miso mixture evenly over fish.

Broil 10 minutes or until fish flakes easily when tested with a fork, basting twice with miso mixture. Sprinkle with chives.

My First Purse

My First Purse

This was my first purse. It’s tiny. Like you could fit an egg in it, that’s about it. I remember having Barbie dolls as a kid, but I don’t remember being overly girlie. I never even carried a real purse until well into my 20s.

De Cero Lunch

Tacos, De Cero, ChicagoOlivia and I met up for the second lunch in our Monthly Lunch Club. Last month we went to Blackbird. This month we went to De Cero. I love De Cero so much. All I have ever gotten there is a la carte tacos. The tacos are delicious but De Cero also has a lot of sentimental value to me because when I worked at FeedBurner we used to go to De Cero for every occasion. It was appropriate that we also had our FeedBurner reunion there over the summer, which was the last time I was at the restaurant. I was due for a visit. Olivia had never been to De Cero. Hopefully she enjoyed it as much as I do.

Pictured above from back to front above, I had:

  • al pastor, tender chile seared pork with onion, pineapple, cilantro and lime (great spicy/sweet combo)
  • avocado, with white onion, roasted garlic, cilantro, and crema (least best this time, it was cold and the onions very raw)
  • vegetarian black beans, with garlic, avocado, cilantro, and crema (a favorite taco)

Not pictured, Olivia had:

  • rajas, hot and mild roasted peppers, potatoes, cream, and cotija queso
  • braised duck, with sweet corn salsa
  • tilapia, special taco of the day

It’s nice that Olivia and I are seeing each other more regularly now and that the time doesn’t slip by and we say “oh, we should hang out” and then never do. I’m having fun trying these restaurants and getting to know her better. One by one we plan to meet monthly and peck off these higher-end restaurants that may be too pricey for dinner, but are affordable for lunch. For next month we talked about maybe going to Bayless’ place. Anyone have any other suggestions?
