July 29th, 2008 · 2 Comments

:: I made this meal about 9 months ago and posted on it but just realized today that I never published the post. Here it is. Better late than never. ::

Lemon-Basil Chicken with Basil Aioli

This chicken was supposed to be served with noodles or rice, but we decided to make sandwiches of it.

Chicken:

1/2 cup chopped fresh basil
1/3 cup chopped green onions
2 tablespoons fresh lemon juice
2 tablespoons white wine vinegar
1/2 teaspoon lemon pepper
1/4 teaspoon freshly ground black pepper
4 (6-ounce) skinless, boneless chicken breast halves
Cooking spray

Chicken

Basil Aioli:
1/4 cup finely chopped fresh basil
2 tablespoons low-fat mayonnaise
1 tablespoon fresh lemon juice
1 1/2 teaspoons Dijon mustard
3/4 teaspoon bottled minced garlic
1/2 teaspoon olive oil

Basil Aioli

To prepare chicken, combine first 6 ingredients in a large bowl. Add chicken to basil mixture, turning to coat.

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 8 minutes on each side or until done.

While chicken cooks, prepare aioli. Combine 1/4 cup basil and remaining ingredients in a small bowl, stirring with a whisk. Serve with chicken.
Yield

4 servings (serving size: 1 chicken breast half and 1 tablespoon aioli)

Baseball & Batman

Hamlin Park, Lakeview, Chicago

Yesterday I spent a lot of time reading outside. Some of that time was at Hamlin Park where there were 3 baseball games going on. I watched the games, read a little, walked around. I think it’s nice that Hamlin Park has so many activities throughout the summer to keep kids occupied and healthy.

Last night Kristin, Dallas and I went to see The Dark Knight. We wanted to see it on the IMAX, but tickets are sold out for weeks so we just saw it at the Kerasotes on Western. The Dark Knight is just as good as everyone has been raving. So intense. At the end of the movie I was like “Whew!” I felt like I wasn’t breathing and my muscles were all tensed up for 2 hours straight. Heath Ledger‘s Joker was so twisted and maniacal and fabulous. It made me uncomfortable to watch some of the scenes. I was feeling a bit sick about the fact that he’s now dead and we’ll never get to see him do another film ever. I think Ledger will get the Oscar for sure.

Goose Island Cubby Blue

Goose Island, Wrigleyville, Chicago

If you get a chance to try Goose Island’s Cubby Blue this summer, you should. Dallas ordered it and I had a sip. It was really good. From Goose Island site:

Cubby Blue 5.0% ABV: We took our Golden Ale and aged it with real blueberries, not any artificial sweeteners. This adds a subtle touch of fruit character while retaining crisp drinkability, which can be lost with the use of sweet, artificial extracts.

Without a Backward Glance by Kate Veitch

finished 07.28.08

This is a book about an unhappy, young mother of four who says she’s going out for an errand and then never comes back. Forty years later, after her children are grown and have kids of their own, one of them makes a chance encounter with her and they are forced to live up to everything. I read this book in under a week. It was one that made me want to know what was going to happen next. Although, it’s seems like it’d be a heavy topic, it was a quick & easy pool read for me. Not that that’s necessarily a bad thing. Also, it’s set in Australia so some of the slang and mannerisms are kind of fun.

Sunday Afternoon at Wrigley

Cubs Win!, Wrigley Field, Wrigleyville, Chicago

Rachelle & Jessica, Wrigley Field, Wrigleyville, Chicago

Yesterday I woke up and was finally able to eat and drink something. I had toast and some water. Jessica came over and we played Rock Band for a while. Oh, did I forget to mention that we upgraded to PlayStation 3 and that Dallas got Rock Band when I was in Cape Cod? We did. So we played some new songs that Dallas had downloaded. Then we headed over to Wrigley. Jill and Brian gave me two of their tickets so Jess and I went to the game with them. On the way over we were so hungry for pizza. There were two pizza-by-the-slice places we went by but neither were open. This is not NY for sure! Finally we just went to Taco Bell by Wrigley Field and ate bean burritos. A nice first meal after not having eaten for like 30 hours!

The game was fun. It was nice outside and the Cubs won. There was a little baby with a family in front of us.. probably 9 months old? Less than a year, I think. Jess got a popsicle and that baby sure did want it! Brian was teasing her for “teasing” the baby. I think this was the first game that I didn’t even have one beer or hotdog at. I for sure didn’t want to drink after being so sick on Saturday.

After the game we walked Brian and Jill home and were going to head back to my house, but accidentally got distracted by shopping on Southport.
