On Saturday we went to Doug, Naoko and Tommy’s house for their annual holiday party with friends & family. Even though Doug told us that Naoko would only be making appetizers, we all knew better than to eat anything before going. Naoko is kind of Martha Stewart. All of the food she makes is so delicious and beautiful. She’s a fantastic cook and baker. And every time you think there couldn’t possibly be more food, she’d pull out something entirely new and set it out beautifully on the table.

This is what I remember she made: Cheese fondue with vegetables and bread for dipping, meatballs, two different noodle dishes, three types of maki (one had hotdogs and egg in it and is a favorite of the kids!), croissant sandwiches, a cheese board, spinach dip, potstickers, and chicken wings. Oh, and Chex mix that a drunken Doug told us 100 times was a secret family recipe of his grandmothers’. Just when you thought you couldn’t eat any more, Naoko pulls out a cake plate and arranges mini tiramisu and strawberry shortcakes, banana custard on the side and 3 different ice creams for the kids. Heather also brought some clam dip and I made Laura’s Cranberry Shortcake Streusel Bars (everyone loved them, even Chris, who doesn’t like cranberries) but we were no competition for Naoko!

Along with the food, we enjoyed many sake pours. Others had brought sake as well, but I liked the one we brought best. Danny had driven us out to Doug & Naoko’s house and on the way we were instructed to pick up a couple bottles of sake at Mitsuwa. We’re never really sure what kind is good, so I took photos of a sake bottle I still had at home from my 30th birthday. Doug and Naoko, who know what sake is good, had gotten it for me and for some reason I never threw the bottle away. It’s Ozeki Karataqmba and runs about $30/bottle at Misuwa, which is not bad because the bottle is pretty gigantic.

Books of 2007

I was surprised this year to see that I read less than last year. I still have a pretty long commute and I travelled a lot, so I thought I’d have read more books, but I guess not. Last year I finished 28 books and this year I read 21. In 2005 I read 24 books and in 2004 I read 31.

Meatloaf & Mashed Potatoes

I made this the other night for dinner – Home-Style Meat Loaf & Mashed Potatoes with Roasted Garlic Butter. I really liked both of them and the recipes are from Cooking Light, so they’re a healthier version than we grew up with.

Side note: It’s hard to take an appetizing photograph of meat loaf!

Meatloaf

Home-Style Meat Loaf
From: Cooking Light

3/4 cup ketchup, divided
1/2 cup quick-cooking oats
1/4 cup minced fresh onion
2 tablespoons chopped fresh parsley
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon pepper
2 large egg whites, lightly beaten
1 1/2 pounds ground round

Preheat oven to 350°.

Combine 1/2 cup ketchup, oats, and next 6 ingredients (oats through egg whites) in a large bowl. Add meat; stir just until blended. Shape meat mixture into an 8 x 4-inch loaf on a broiler pan coated with cooking spray. Brush 1/4 cup ketchup over meat loaf. Bake at 350° for 1 hour and 10 minutes. Let stand 10 minutes before slicing.

Mashed Potatoes

Mashed Potatoes with Roasted Garlic Butter
From Cooking Light

Make the garlic butter ahead and refrigerate it for up to 3 days.

Garlic butter:
2 whole garlic heads
1/4 cup butter, softened
1 tablespoon finely chopped shallots
2 teaspoons finely chopped fresh rosemary

Potatoes:
2 1/2 pounds cubed Yukon gold or red potato
1/3 cup fat-free, less-sodium chicken broth
1/4 cup buttermilk
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Preheat oven to 350°.

To prepare garlic butter, remove white papery skin from garlic heads (do not peel or separate the cloves). Wrap each head separately in foil. Bake at 350° for 45 minutes; cool 10 minutes.

Separate cloves; squeeze to extract garlic pulp. Discard skins. Combine garlic pulp, butter, shallots, and rosemary.

To prepare potatoes, place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.

Drain and return potato to pan. Add broth and buttermilk; mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly. Stir in garlic butter, parsley, salt, and pepper.

Christmas Dinner at Auntie Gail’s

The first year I went to Christmas dinner at Dallas’ Aunt Gail’s house Chris and Mitch were the youngest kids I knew. Kyle and Winnie were visiting from California and they had 2 young boys, but I didn’t know them well and was overwhelmed by all the new people that I don’t remember them that much.

Last year Tommy and Hideto were born and it was their first Christmas. It was so much fun. This year Scotty & Krystyn didn’t come out from California so Hideto wasn’t at the party, but Winnie and Kyle made it out and this time with an addition: baby Kate. It’s was her first Christmas. Kate’s brothers Derek and Ben are getting so much older and running around and playing with Chris and Mitch. And Tommy… so cute! It’s his second Christmas and he’s starting to talk and have a real personality. Naoko speaks Japanese to Tommy at home and he’s already bilingual. When Naoko tells him things in Japanese he really listens and does it immediately. Pretty funny. Maybe that’s when he knows he’s really in trouble.

So, I guess the point is that it’s great to see all of Dallas’ family, but just like at my family’s Christmas, the kids are what make it great.

Yearly Santa Hat Photo

Rachelle Santa Hat

It’s kind of a “must” now to post these each year. I like to see how I’ve changed year to year. What I remember last year when I took this photo was that I was completely stressed out to the point of knowing something was gonna break but not knowing what, which is even more stressful. I think you can see it in my eyes. It ended up manifesting itself physically with a bunch of repetitive stress problems, a pinched nerve and an eye tick that went on for months. That was a big warning sign for me. It was difficult for me to let things go this year, but I did. I’ve been trying to take better care of myself mentally and I think it’s helped a lot. I kind of got off course physically, but plan to get on better track with that in the upcoming year. Merry Christmas, everyone!
