

On several occasions I’ve gone over to Erin’s house and we’ve grilled vegetables in a basket on her grill and they turned out so delicious that a grilling basket was the first thing I wanted to get when we got our new grill. Sadly, it wasn’t until last weekend that I actually got a grilling basket. This week one night I cut up onions, broccoli, asparagus, eggplant, squash, red bell pepper, and mushrooms, tossed them with olive oil and a little salt and pepper and grilled them. They turned out great. I was thinking about adding some shrimp next time. Yum!

it mostly looked the same. i undercooked them a bit, but the leftovers were good reheated (cooked more).
