
This recipe is so quick and easy, but Erin and I are completely addicted to it. I’ve made it a few times in the last few weeks and she told me she’s even eaten it alone for dinner. Some variations are to use half cauliflower/half broccoli and I’ve used whatever nuts I’ve had in the cupboard. Mostly almonds instead of walnuts. Still turns out great.
Ingredients
1 sprays cooking spray
2 tsp sesame oil
2 cup broccoli, florets
1 1/2 Tbsp chopped walnuts
Directions
1. Coat a large skillet or wok with cooking spray. Pour in oil and heat over medium-high heat.
2. Stir-fry broccoli until crisp-tender, about 2 to 3 minutes; add walnuts and stir-fry 1 minute more. Yields about 1/2 cup per serving.
Rachelle, I bought A POUND of broccoli at Stanley’s Sunday morning for this stuff. And I’m all about the almonds, too, though cashews are a nice addition.
