
A few weeks ago I made this banana bread with some bananas I had that were getting overripe. I got the recipe from All Recipes, a site I love. The site has great search & personalization capabilities, but what I like best is that there are so many active readers. This recipe for banana bread was rated an average of 5/5 stars by over 1,500 people. If that many people say something is good, it’s bound to be.
The recipe is after the jump, the only thing I changed was to add about a half cup of chopped walnuts to the batter and then I sprinkled some more on top.
Banana Bread
Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 eggs, beaten
2 1/3 cups mashed overripe bananas
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
Thats the only site I ever go to when I’m looking for a recipe online. It rules.
For a great variation throw in half a bag of chocolate chips!

I love banana bread! I’ve been getting some wonderful recipes from the Cooking Light site. I highly recommend the Spiced Pumpkin Bread – it got rave reviews at my running club’s refreshment run. They also have a pretty good Marbled-Chocolate Banana Bread — mmmm, banana and chocolate!
