
Last night while watching Law & Order reruns (I’ll never get sick of them!) I made my first recipe from License to Grill, a book that my parents gave me for my birthday. Neo-Postmodern Polynesian Grilled Chicken. A long funny name for YUM. It turned out great. To top it off, this site has calculated that there is only 2.5 grams of fat per serving. For sides I made edamame and couscous.

Neo-Postmodern Polynesian Grilled Chicken
For the Dressing:
1/2 cup fresh lime juice (about 4 limes)
1/4 cup sesame oil
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon minced garlic
1 tablespoon minced fresh chile pepper
2 tablespoons minced ginger
Freshly cracked pepper to taste
For the Rest:
4 whole boneless chicken breasts
1/4 cup olive oil
Salt & freshly cracked pepper to taste
1 red bell pepper, halved & seeded
1 green bell pepper, halved & seeded
1 red onion, peeled and cut into 1-inch-thick rings
2 cups fresh pineapple chunks
1/4 cup roughly chopped fresh mint
1/4 cup roughly chopped fresh cilantro
1/4 cup roughly chopped fresh basil
Directions:
1. Make the dressing: In a small bowl, combine all of the dressing ingredients and mix well. Cover & refrigerate.
2. Sprinkle the chicken breasts lightly with some of the olive oil (use about 2 tablespoons) & salt & pepper to taste & grill over a medium-hot fire for 7 to 9 minutes per side. To check for doneness: Cut into one breast at its thickest part and peek inside to be sure it is opaque all the way through with no pink.
3. Meanwhile, sprinkle the bell pappers & onions with the remaining olive oil & salt & pepper to taste, place on grill, and cook for 3 to 4 minutes on each side, or just until browned.
4. Remove the chicken, onions, & peppers from the grill. Once they are cool enough to handle, cut them into large chunks & place them in a large bowl along with the pineapple chunks, mint, cilantro, & basil. Add enough dressing to moisten, toss well, & serve warm or chilled.

Looks awesome! I have a question tho. I love edamame. I saw it at Trader Joe’s but I was scared to buy it. Do you just boil it up and salt it? I just want to snack on it like you do at a sushi place. It’s one of my favorite things.

Pretty much if you can boil water then you can make edamame. You just bring salted water to a boil then dump the edamame in for 6 minutes or so.

I shouldn’t have looked at your website during my lunch break. This looks great, and all I have to eat is a lousy salad! I wish you were coming to our place for Thanksgiving this year. We’d definitely make you cook for us, it looks like you’ve been making some delicious recipes since you moved to Chicago.

i think people need to stop calling edamame, edamame. it’s about time we just call them soy beans. this is america people, america!

Can you use a Foreman grill for it or do you need a proper charcoal/gas grill?

Tien, but c’mon edamame sounds so much yummier. And on that note, shouldn’t we call Sushi “rolled up raw fish and rice,” and Foie Gras, Goose Liver? I’d rather call it Foie Gras. It just sounds better, and if I’m paying, what? $40 a pound for the stuff I want to call it something fancy! : )

sk - i think you could use a foreman grill. for sure to grill the chicken breasts, right? not sure about the peppers & onions but I’m sure you could make it work. Or skillet grill them. I don’t have a proper grill. I have a camping grill but I make it work.

but there’s no word for sushi in english. and as far as i’m concerned, goose liver works. then you wouldn’t confuse anyone.
