The eggs in the mayo (mayo is basically an egg/fat emulsion) give the bread a richer, crustier coating than butter when browned. The closest comparison I can think of is french toast, which also uses eggs in a similar manner. Try it out sometime. Rachelle did once. She thought it was good, but nothing fantastic. I love it. Never going back to buttah..</description>
