Fresh Mozzarella Grilled Cheese

My favorite grilled cheese ever is from Sosa Borella in Tribeca. Lately I’ve been jonesing for it so I bought fresh mozzarella, basil pesto and tomato and made my own version. Of course, Sosa’s is still better, but my own creation was pretty damn good!

    grilled cheese is one of my favorite foods, along with cheeseburgers. if you are ever in ann arbor, michigan - i recommend the yummy grilled cheese at red hawk or a more exotic version at sister restaurant zanzibar, just down the street.

    Rachelle - thanks for the Sosa Borella tip - I always get lost down there - but I’ll have to find this for a grilled cheese.

    That looks so GOOOOD. I wish I could make grilled cheese. Mine always turns out too dark. Yours’ has just the right golden color.

    The secret to a great grilled cheese is mayonnaise. Instead of buttering the slices of bread, spread a light coat of mayo on each side and grill using a moderate to low temperature.

    Did you take your dad and I there? I think I had that ? Mmnnn not sure but I know while in the city i had fresh mozzarella a few times and wow ! That sandwich looks good …and with Baked Tostitos chips on your plate too ! YUMMM

    arthur, 4 years in ann arbor and i don’t think i ever even heard of those placess janelle mentioned.

    mark, what does the mayo do? does it also add flavor?

    That sandwich looks great. I usually stick to just cheese and bread, but now I’m inspired to experiment.

    The eggs in the mayo (mayo is basically an egg/fat emulsion) give the bread a richer, crustier coating than butter when browned. The closest comparison I can think of is french toast, which also uses eggs in a similar manner. Try it out sometime. Rachelle did once. She thought it was good, but nothing fantastic. I love it. Never going back to buttah..

    i dont think it worked that great when i did it because i used miracle whip instead of mayo

    elaine, my secret to a golden sandwich is putting butter in the pan, not on the bread.
