


Halfway through making these Almond Joy Cookies I remembered my vow to not eat any desserts in April. Whoops. I am going to try not to eat many of these and to give most of them away.. but they’re already calling out my name in the middle of the night.
This recipe was emailed to me by a rachelleb.com reader, Tara A. Big thanks to Tara – the cookies came out as delicious as you promised! The recipe is as follows:
Almond Joy Cookies
Ingredients:
1 cup butter
1 1/2 cups white sugar
1 1/2 cups brown sugar
4 eggs
4 teaspoons vanilla extract
4 1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
5 cups semisweet chocolate chips
2 cups flaked coconut
2 cups chopped almonds
Directions:
1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
2. In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, baking soda and salt, stir into the creamed mixture until well blended. Finally, stir in the chocolate chips, coconut and almonds. Drop by rounded spoonfuls onto the prepared cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
Makes 48 cookies.

Just knowing your gone makes it not the same around NYC, but you seem to be getting in the swing in Chicago, but those trains dont run 24*7, that must put a crimp in things a little bit.

Actually… trains do NOT run 24×7 to all locales in Chicago. Apparently folks that live off the 54/Cermak blue line don’t need to go anywhere on the weekends, when that line doesn’t run at all. My family and I were trapped in Pilsen on Saturday night — we were even told “cabs don’t come here.”
